Somewhere along the path to healthy eating, the world has discarded one of the most simple and enjoyable BBQ pleasures. BBQ chicken breasts, bone in and skin on. I know, the fat and cholesterol, not to mention the carcinogens from crisped flesh are all bad for you. A few weeks ago, I read something somewhere that got me thinking that we hadn’t had chicken cooked this way in a long, long time. On the next shopping trip I went looking for some nice chicken breasts. It took several shopping trips before we could actually even find chicken with the skin on! Once we did, I scooped them up.
I heated the grill, washed the chicken titties and slathered them in PC Smokin Stampede Beer & Chipotle Baqrbeque Sauce. Now I know that all the health mavens will tell you to put the sauce on at the end. Horse Hockey! Juice those puppies up, just be sure to stick around and keep turning them on the grill, so the sauce doesn’t burn. When faced with a platter of these, the kids weren’t quite sure what to do. Once we convinced them that the chicken would be good, they dug in and said it was the best chicken they’d ever had! Indeed, the skin had crisped up really nicely and has sealed in all the juices and flavour. It really was the best chicken we had barbecued in a long time.
BBQ chicken used to be a staple in a lot of homes and now I know the reason. It tastes great. I can’t believe that our 12 year old had never had chicken cooked on the barbie with the skin on. It will not be the last time. So, if you are looking for a treat, go back to a simpler time and drop some chicken breasts on the grill, complete with skin and bones. You’ll be happy you did!
