Cooking with leftovers: Ultimate Steak Sammich

When you BBQ steaks for a crowd, it’s not uncommon to have some leftover Grade A slabs of cow. There are tons of ways to use left over steak, but a great steak sammich is probably the most satisfying. When you combine it with some simple, fresh grilled veggies and a spot or two of goats cheese you have an instant winner. Best of all it is simple.

Ingredients
Steak - fresh cooked or left over
Peppers - use any color you like, we prefer nice sweet orange, yellow and red
Onions - Sweet ones like Vidalia
Goats cheese - plain or rolled in pepper or bruschetta stuff
Zucchini
Soft, long rolls

Zucchini? What are we, nuts? Yes we are, but they go great with this sammich!

Prep work
Slice left over steak thinly and pile on a microwavable plate. The sammich will be juicier if the steak was originally cooked no more than medium rare.

Using a sharp knife, quarter the peppers and remove seeds. Put pepper quarters in a large bowl and toss with salt, pepper and olive oil.

Cut ends off zucchini and then slice thinly lengthwise. As with the peppers, coat lightly with olive oil and sprinkle with salt and pepper.

Peel onions and slice into thin rings.

Get cooking
Once the BBQ is heated up to medium, place the peppers and zucchini on the grill. Turn them frequently to prevent burning. Remove from heat when veggies are soft, but not mushy, which should take about 5 minutes.

While veggies are grilling, saute onions in a small pan with olive oil. If your bbq has a side burner, now is the time to use it so you can keep an eye on the other veggies.

When veggies are cooked, reheat steak in the microwave. You might want to cover partially with plastic wrap to keep the moisture in.

Assembly
Slice the rolls all the way through and remove the tops.

Layer on the steak first, followed by a few dollops of goats cheese.

Then add layers of onion, then zucchini. Add the peppers last, with skin side up. This way, the peppers act like a cap to help held everything in place.

Place the tops back on the rolls and cut sammich in half.

This is my favourite thing to do with leftover steak (though leftovers rarely occur). The addition of goat’s cheese is a fantastic idea!
