Taco in a Bag

One of the fun kid-friendly recipes I found that we used for lunch while we were camping was Taco in a Bag.  (Gary even had this served to him at a car event he was at).  The kids absolutely loved it and I think it will be a staple as a school lunch.  It looks a bit messy but tastes really good.  They have already shared the recipe with friends and we have made it for some of them since we came back.

 

Taco in a Bag

Individual bags of  cheese natchos, whatever brand/flavour you prefer (we bought a case from Costco before we left)

1 lb ground beef (I pre-cooked the meat, added the seasoning and froze it in a Ziploc bag and just reheated it at the campsite)

Fajita spice or use store bought if you want.

grated cheese – whatever kind you prefer (we bought the resealable grated cheese or you can grate your own and store in a Ziploc bag)

sour cream

salsa

 

Method

Pre-cook the meat and add the taco seasoning (follow the directions on the package or add desired amount from your home made spices).

Take a bag of natchos and carefully squeeze the bag to crush the chips.  Open the bag of natchos across the long side.  Add meat, sour cream, cheese, salsa and whatever toppings you can think of (green onions, tomatoes, hot sauce. etc).   Shake the bag and enjoy.   You can use a spoon or your fingers, whichever you prefer.

 

Your kids will think you are a super hero if you set this up for the first day of school!
