Bacon Wrapped Chicken and Peach Skewers

A week long camping trip with 3 children involves some pre-planning around food.  Our kids like to help with the menu and the cooking and typically like to cook the same things every time we go. This year for our trip to Silent Lake Provincial Park, I decided to do some internet surfing before we left and come up with some kid friendly and different things that we could eat.  Since we are typically out canoeing, hiking or swimming in the lake all day, I also wanted to do some prep before we left so there was less to do when we arrived back at the campsite in the evening.  The following recipe is one we have use at home on the BBQ and the kids insisted it come with us on our trip.

Bacon Wrapped Chicken and Peach Skewers

1 lb boneless, skinless chicken breast, cut into cubes

bacon, cut slices in half

peaches, peeled and cut into chunks (firmer peaches work best)

BBQ sauce

Skewers (if using wooden skewers, soak in water for 15 minutes before using)

 

Wrap each cube of chicken with half a piece of bacon.  Place chicken on the skewer followed by a chunk of peach.  Repeat 2 or three times, ending with a cube of bacon wrapped chicken.

Brush the loaded skewer with BBQ sauce and grill for approximately 10-15 minutes or until the bacon is crisp and chicken is cooked through.  Baste with BBQ sauce as you turn the skewers.  Remove from grill, brush lightly with BBQ sauce and enjoy.

(To make the camping prep easier, cut the chicken into cubes, freeze individually on a cookie sheet and then place the frozen cubes in a Ziploc bag.  You can add a bit of BBQ sauce into the bag as well.  The frozen chicken will act as an ice bag in the cooler and will be easier to skewer when it thaws out).
