Once again I have to comment on the joys of working from home. When a craving hits as lunch time approaches, it is easy to just root around in the fridge and find the ingredients for what you want. What you really, really want.

Anyway, today it occurred to me that we had some wonderful spiral ham left over from Easter weekend and a couple of sausages from the weekend. Hmmmm. Eggs, onions, ham, sausage and shredded cheddar. Sounds like omelette time to me!
No recipe this time, just some photos. If you are reading FAB, I’m going to assume that you have an idea how to make an omelette.
Oh yes, one more thing: I added in a few healthy dashes of chipotle hot sauce. This was lunch, not breakfast!
